Kibbeh in all its types is one of the most famous Iraqi dishes, especially Aleppo Kibbeh, which is the name the Iraqis give to kibbeh made of rice. In the past, Iraqi merchants used to carry it with them on their way from Baghdad to Aleppo, because rice by its nature does not spoil quickly. 

 

Aleppo Kibbeh is made from well mashed rice with boiled potatoes, in addition to turmeric. As for the filling, it consists of minced meat, onions, celery, and currants, and there are those who add pine nuts, almonds, and basra “noomi (black or dried lemon).
